Method
- 1
Heat the oil in a large frying pan over a high heat. Add the pepper strips and jalapeño and cook for 6 to 8 minutes, stirring now and then, until softened and charred in places.
7 min - 2
Add the onion and cook for 4 minutes until soft. Add the garlic, oregano and salt and cook for 1 minute.
4 min - 3
Stir in the sweetcorn and cook for 3 minutes more until it starts to colour. Take off the heat and stir in the lime juice and coriander.
3 min - 4
Warm the tortillas from your base recipe in a dry pan for 30 seconds each side and keep wrapped in a cloth.
- 5
Spoon the rajas and corn into the tortillas and top with your ready made creamy avocado salsa (see the base recipe). Serve with lime wedges.
Tips
- Poblano peppers are traditional for rajas, but green peppers with a jalapeño are an easy UK swap.
- Let the peppers char properly in the hot pan, as that is where the smoky flavour comes from.
- Add crumbled queso fresco or feta at the table if you are not cooking dairy free.
Storing and freezing
Keep the cooked filling in the fridge for up to 3 days and reheat until steaming hot. It freezes for up to 2 months.
Questions
What are rajas?
Rajas means strips. In Mexican cooking it usually means strips of roasted poblano pepper cooked with onion, often with cream. This version is a lighter vegan take.
Can I add protein?
Add a tin of drained black beans or fried tofu to the pan with the sweetcorn.
Can I roast the peppers instead?
Yes. Char whole peppers under a hot grill until blackened, steam them in a covered bowl for 10 minutes, peel and slice. Then cook with the onion and corn.
