Tips

  • Turkey breast dries out fast. Simmer gently, not boiling, and check at 10 minutes.
  • Slice the steaks through the middle to be sure they are cooked, as they should be white all the way through.
  • Pound thick steaks to an even thickness for even cooking.
  • Serve with warm corn tortillas or rice if you want a bigger meal.

Storing and freezing

Cool within 1 hour and keep in the fridge for up to 3 days. Freeze for up to 2 months. Reheat until steaming hot all the way through.

Questions

Can I use turkey mince?

For a quick version brown 500 g turkey mince, add the sauce and simmer for 10 minutes. It makes a good taco or rice bowl filling.

Can I use leftover roast turkey?

Yes. Slice about 500 g cooked turkey, warm it in the sauce for 5 minutes and serve as written.

Is the dish spicy?

It is mild to medium. The sauce is tangy more than fiery.

What if I do not have black beans?

Use pinto beans, refried beans or just rice. The turkey and sauce are the main part of the dish.
