Method

  1. 1

Heat 1 tbsp oil in a large frying pan over a high heat. Add half the mushrooms in a single layer and fry for 5 minutes until deeply golden. Tip out and repeat with the remaining oil and mushrooms.

    5 min
  2. 2

Return all the mushrooms to the pan with the garlic and oregano. Cook for 1 minute, then season with 1 tsp salt.

    1 min
  3. 3

Warm your ready made corn tortillas (see the base recipe) in a dry pan until soft.

  4. 4

Fill each tortilla with mushrooms. Top with your ready made pickled red onions (see the base recipe), coriander and a spoonful of your ready made salsa macha (see the base recipe).

  5. 5

    Serve with lime wedges.

Tips

  • Fry the mushrooms in batches. A crowded pan makes them steam and turn grey.
  • Do not salt until the end or they release too much water.
  • Mix in a splash of lime juice for brightness.

Storing and freezing

Keep cooked mushrooms in the fridge up to 2 days and reheat until steaming hot.

Questions

Can I use other mushrooms?

Yes. Oyster, portobello or shiitake all work and add different textures.

Is it vegan?

Yes, as long as you use a vegan salsa macha and tortillas, which this recipe does.
