Method

  1. 1

Heat 200°C (180°C fan). Season the fish with lime juice and salt. Poach it in a pan with enough simmering water to cover for 5 to 6 minutes until it flakes. Drain well and flake into a bowl.

  2. 2

Mix the fish with the mozzarella and spring onions.

  3. 3

Warm the tortillas, wrapped in a damp cloth, in a microwave for 30 seconds so they do not crack when rolled.

  4. 4

Put 2 tablespoons of filling along one edge of each tortilla and roll up tightly. Lay seam side down on a lined tray. Brush all over with the oil.

  5. 5

Bake for 15 to 18 minutes until golden and crisp. Meanwhile warm your ready made red enchilada sauce (see the base recipe).

  6. 6

Serve with the lettuce, the warm red sauce for dipping and your ready made lime crema (see the base recipe).

Tips

  • Warm the tortillas well before rolling. Cold corn tortillas split.
  • Keep the filling in a neat line so the taquitos roll tightly and stay closed.
  • Roll them seam side down on the tray so they do not unroll.
  • Air fry at 190C for 8 to 10 minutes if you prefer.

Storing and freezing

Best eaten fresh from the oven. Cool leftovers within 1 hour and keep in the fridge for up to 1 day. Reheat in a hot oven until steaming hot all the way through.

Questions

Can I deep fry them?

Yes, in hot oil for 2 to 3 minutes. Baking is easier and uses less oil, and they stay crisp.

Can I freeze them?

Freeze unbaked taquitos on a tray, then bag them for up to 1 month and bake from frozen for about 22 minutes until golden and hot all the way through.

What fish can I use?

Any firm white fish. Hake, haddock and pollock are good, and tinned tuna also works.

Are they dairy free?

Not as written. Leave out the mozzarella and the lime crema and serve with avocado slices instead.
