Method
- 1
Toss the chicken strips with the fajita seasoning mix (see the base recipe) and half the oil.
- 2
Heat the remaining oil in a large frying pan over a high heat. Cook the chicken for 5 to 6 minutes until golden and cooked through with no pink. Add the peppers and onion and cook for 5 minutes until soft. Squeeze over the lime juice.
11 min - 3
Warm your ready made refried beans (see the base recipe) in a small pan with a splash of water until hot and spreadable.
4 min - 4
Split the rolls and toast them cut side down in a dry pan for 1 to 2 minutes until golden.
2 min - 5
Spread the bottom half of each roll with beans. Pile on the chicken mixture, avocado slices and pickled red onions (see the base recipe).
- 6
Close the rolls, press down gently and serve straight away.
Tips
- Scoop out some of the soft crumb from the rolls if they are very thick, so there is room for the filling.
- Spread the beans on both halves for a seal that stops the roll going soggy.
- A smear of mashed chipotle adds heat and smoke.
- For a gluten free torta, use gluten free rolls and check the other labels.
Storing and freezing
Best eaten fresh. Keep the cooked chicken and peppers in the fridge for up to 2 days, cooled within 1 to 2 hours, and reheat until steaming hot before filling the rolls.
Questions
What is a torta?
A torta is a Mexican sandwich served in a soft white roll such as a bolillo or telera. They are toasted on a griddle and filled with meat, beans, avocado, pickled chillies or onions and salsa.
What bread should I use in the UK?
Look for crusty white rolls, ciabatta rolls or soft baguette pieces. Bolillo style rolls have a crisp crust and a soft inside, so choose a roll that matches.
Can I make these ahead?
Prepare the chicken, peppers and beans in advance and keep them in the fridge. Assemble and toast the rolls just before eating so they stay crisp.
