Method
- 1
Heat the oven to 220°C (200°C fan) and put a large baking tray inside to heat up.
- 2
Toss the sweet potato wedges with the oil and the fajita seasoning mix (see the base recipe) in a large bowl until evenly coated.
- 3
Tip onto the hot tray in a single layer, with space between the wedges. Roast for 30 to 35 minutes, turning once, until soft in the middle and dark and crisp at the edges.
33 min 20 s - 4
Scatter the pumpkin seeds over the tray for the last 5 minutes so they toast.
5 min - 5
Pile the wedges onto a platter. Drizzle with your lime crema (see the base recipe) and scatter over the coriander.
- 6
Serve with lime wedges.
Tips
- Use two trays if needed. Crowded wedges steam and go soft instead of caramelising.
- Leave the skins on for texture and a more rustic look.
- A pinch of chilli flakes with the spices turns up the heat.
- For a dairy free version, swap the crema for a dairy free yoghurt with lime juice and a pinch of salt.
Storing and freezing
Best eaten fresh. Keep leftovers in the fridge for up to 3 days, cooled within 1 to 2 hours, and reheat in a hot oven until steaming hot all the way through. Do not freeze dressed wedges.
Questions
Are camotes the same as sweet potatoes?
Yes. Camote is the Mexican name for sweet potato. Roasted camotes are sold by street vendors across Mexico, usually with sweet toppings, but savoury versions with chilli and lime are also common.
How do I get sweet potato wedges crisp?
Use a very hot oven, a pre-heated tray, enough oil to coat and plenty of space. Do not stack the wedges, and turn them once halfway through cooking.
Can I make this vegan?
Yes. Serve with creamy avocado salsa or a dairy free yoghurt and lime dressing instead of the dairy based lime crema.
