  2. 2

Put the tomatoes, cucumber, green pepper and red onion in a large serving bowl.

  3. 3

Whisk your ready made vinaigrette (see the base recipe) with your ready made harissa paste (see the base recipe) in a small bowl until smooth.

  4. 4

Pour the dressing over the vegetables and toss gently. Leave for 5 minutes so the vegetables absorb the flavour.

  5. 5

Flake the tuna over the top and add the eggs and olives.

  6. 6

Scatter with the parsley and serve with a final grinding of black pepper.

Tips

  • Dice the vegetables to a similar size so every forkful has a bit of everything.
  • Salt draws water out of tomatoes, so dress the salad just before serving.
  • Serve with warm flatbread or potatoes to make it more substantial.

Storing and freezing

Best eaten fresh. Keep any leftovers covered in the fridge for up to 1 day. Store the dressing separately for up to 3 days.

Questions

Is this a traditional Tunisian dish?

A chopped salad of tomato, cucumber, pepper and onion with olive oil and harissa is a staple on Tunisian tables, and tuna and egg are common additions in a salade tunisienne.

Can I make it vegan?

Yes. Leave out the tuna and egg and add a tin of chickpeas and a handful of capers.

Can I prepare it ahead?

Chop the vegetables and make the dressing up to a day ahead and keep them separate. Combine just before serving so the salad stays crisp.
