Method
- 1
Heat the oven to 200°C (180°C fan). Prick the sweet potatoes all over with a fork and bake directly on the oven shelf for 50 to 60 minutes, until the skins are crisp and the flesh is very soft when squeezed.
55 min - 2
Pat the chickpeas dry. Toss them on a tray with the olive oil, cumin and the ready made harissa paste (see the base recipe), and roast for the last 25 minutes of the potato time, shaking once, until crisp at the edges.
25 min - 3
Mix the red onion with the lime juice and a pinch of salt and leave for 10 minutes to soften and turn pink.
- 4
Put the spinach in a colander and pour over a kettle of boiling water to wilt it. Squeeze out the water.
- 5
Loosen your ready made tahini sauce (see the base recipe) with cold water until pourable.
- 6
Split the potatoes open, pile in the spinach and chickpeas, then top with the quick pickled onion, tahini sauce and coriander.
Tips
- Pat the chickpeas very dry before roasting. Any water on them will keep them soft instead of crisp.
- Baking sweet potatoes directly on the shelf gives crispier skins. Put a tray underneath to catch drips.
- Microwave the potatoes for 8 minutes first, then finish in the oven for 20 minutes to save time.
Storing and freezing
Keep leftover chickpeas and potatoes separately in the fridge for up to 3 days. Reheat potatoes until steaming hot all the way through and refresh the chickpeas in a hot oven.
Questions
Can I make the chickpeas milder?
Yes. Use half the harissa, or swap for smoked paprika and a pinch of cayenne. Harissa brands vary a lot in heat, so taste a little first.
Can I use white potatoes?
Yes. Large baking potatoes need 1 hour 15 minutes at the same temperature. The toppings work equally well.
