Method

  1. 1

Heat the oven to 200°C (180°C fan). Boil the potatoes in salted water for 15 minutes until tender. Drain well.

    15 min
  2. 2

Tip the potatoes onto a large baking tray. Crush each one gently with the back of a fork or a mug. Drizzle with 1 tbsp oil, add salt and pepper and roast for 20 minutes.

    20 min
  3. 3

Rub the salmon with the remaining oil and lemon zest. Add to the tray beside the potatoes, skin side down, and roast for 10 to 12 minutes until the fish flakes and is opaque all the way through.

    11 min
  4. 4

Steam or boil the green beans for 4 minutes until just tender.

    4 min
  5. 5

Use your ready made tzatziki (see the base recipe). Stir the lemon juice, half the dill and the capers into 200 g of it.

  6. 6

Serve the salmon on the potatoes with the beans, a spoonful of lemon dill tzatziki and the remaining dill.

Tips

  • Skin side down gives the crispest skin and the fish stays moist.
  • Leave the tzatziki at room temperature for a few minutes, as fridge cold sauce dulls the flavour.
  • Do not overcook salmon. It flakes easily when ready and keeps cooking in the hot tray.

Storing and freezing

Keep leftovers covered in the fridge and eat within 2 days. Reheat gently until steaming hot all the way through, or eat the salmon cold in a salad.

Questions

Is this meal gluten free?

Yes. Salmon, potatoes, beans, capers, lemon and tzatziki contain no gluten. Check the caper label in case of any added ingredients.

Can I use other fish?

Yes. Trout, sea bass or thick cod fillets all work. Cod needs about 12 to 14 minutes and has no skin to crisp.

Can I make it dairy free?

Yes. Make the tzatziki with a thick unsweetened coconut or soya yoghurt, or serve the salmon with olive oil and lemon.
