Method

  1. 1

Heat the oven to 210°C (190°C fan). Press the tofu between paper towels under a weight for 15 minutes to drain, then cut into 2 cm cubes.

  2. 2

In a large bowl, mix your ready made harissa paste (see the base recipe) with the olive oil, half the lemon juice and the salt.

  3. 3

Add the sweet potatoes, peppers, onion and chickpeas and toss until coated. Spread on a large baking tray, or two, so they are in a single layer.

  4. 4

    Roast for 20 minutes.

Toss the tofu in the remaining bowl coating, add it to the tray and turn the vegetables. Roast for a further 20 to 25 minutes until the tofu is golden and the sweet potato is tender and caramelised at the edges.

  6. 6

Stir the remaining lemon juice into the soya yoghurt. Serve the traybake with the yoghurt and the coriander.

Tips

  • Do not overcrowd the tray. Use two if needed, so everything roasts rather than steams.
  • Pressing the tofu helps it crisp. Firm or extra firm tofu works best.
  • Serve with rice, couscous or quinoa if you want a bigger meal.

Storing and freezing

Keep in a covered container in the fridge for up to 3 days. Reheat in a hot oven until steaming hot. Do not freeze with the yoghurt.

Questions

Can I use paneer or halloumi?

Yes, though they are not vegan. Use the same weight and roast for the final 20 minutes only, until golden.

Can I prepare it in advance?

Yes. Chop the vegetables and toss them with the harissa mixture a day ahead and keep covered in the fridge. Roast when you are ready.

How hot is it?

Medium. The sweet potato softens the heat, but use less harissa and serve extra at the table if you prefer a gentler dish.
