Method

  1. 1

Put the beef, water, halved onion, bay leaves, peppercorns and 1 tsp of the salt in a large pot. Bring to the boil, skim off the grey scum, then turn the heat low and simmer gently for 1 hour 15 minutes, until the beef is tender.

  2. 2

Meanwhile, heat the oil in a large frying pan. Cook the chopped onion and carrots for 8 minutes until soft. Add the beetroot, tomato purée, vinegar, sugar and 100 ml of the cooking liquid. Cover and cook on a low heat for 15 minutes, until the beetroot is tender and the mix is a bright, glossy red.

  3. 3

Lift the beef out onto a board. Fish out and bin the onion, bay leaves and peppercorns. Shred the beef into bite-sized pieces and return the broth to a gentle simmer.

  4. 4

Add the potatoes to the broth and simmer for 10 minutes. Add the cabbage and simmer for 5 minutes more.

  5. 5

Stir in the beetroot mixture, shredded beef, garlic and the rest of the salt. Simmer for 5 minutes, then taste. It should be a balance of sweet, sour and savoury, so add a splash more vinegar or a pinch of salt if it needs it.

  6. 6

Turn off the heat, stir in half the dill and leave the lid on for 15 minutes. Borscht tastes better after a short rest.

  7. 7

Ladle into warm bowls and serve with a spoonful of soured cream and the rest of the dill.
