Method

  1. 1

Mix the flour, yeast, sugar and salt in a large bowl. Add the warm milk, melted butter and egg and mix to a soft dough. Knead for 10 minutes until smooth and stretchy. Cover and leave in a warm place for 1 hour, until doubled.

Meanwhile, heat the oil in a large frying pan. Cook the onion for 5 minutes, then add the cabbage and cook over a medium heat for 20 minutes, stirring often, until soft and golden.

  3. 3

Stir in the 30 g butter, hard-boiled eggs, dill, 1 tsp salt and plenty of black pepper. Cool completely.

  4. 4

Line two baking trays. Divide the dough into 16 balls (about 55 g each). Flatten each into a 10 cm round, put a heaped tablespoon of filling in the middle, then pinch the edges tightly to seal.

  5. 5

Place the buns seam side down on the trays and leave for 20 minutes to puff slightly. Heat the oven to 200°C (180°C fan).

  6. 6

Brush with beaten egg and bake for 18 to 20 minutes, until deep golden. Cool on a rack for 10 minutes before eating warm.
