Method
- 1
Heat the oven to 220°C (200°C fan). Prick the aubergines all over with a fork and put them on a baking tray with the whole peppers. Roast the peppers for 30 minutes and the aubergines for 45 minutes, turning once, until the skins blacken and the flesh collapses.
45 min - 2
Put the hot peppers in a bowl and cover with a plate. Leave the aubergines to cool for 15 minutes.
15 min - 3
Peel the peppers and remove the seeds. Scoop the flesh out of the aubergines and drain in a sieve for a few minutes. Chop both finely with a knife. A food processor makes it too smooth.
- 4
Heat 2 tbsp of the oil in a wide pan. Cook the onion for 8 minutes until soft. Add the tomatoes and cook for 10 minutes, until jammy.
18 min - 5
Stir in the chopped aubergine and pepper, garlic, salt and the rest of the oil. Simmer for 10 minutes, stirring often, until thick and glossy.
10 min - 6
Stir in the lemon juice and parsley. Cool to room temperature or chill. Serve with bread or raw vegetable sticks.
