Method

  1. 1

Fry the mushrooms and onion in the oil in a large pan over a high heat for 7 minutes until golden and dry. Add the garlic for 1 minute and season with salt.

    8 min
  2. 2

Warm your ready made easy red mole (see the base recipe) with the water in a small pan for 3 minutes until just loose.

    3 min
  3. 3

Lay out 4 tortillas. Spread each with a spoon of mole, scatter with mozzarella and mushrooms, then top with a second tortilla.

  4. 4

Heat a dry frying pan over a medium heat. Cook each quesadilla for 2 to 3 minutes a side, pressing down, until the cheese melts and the tortillas are toasted.

    5 min
  5. 5

Cut into wedges and serve with the rest of the mole warmed for dipping.

Tips

  • Cook the mushrooms until dry so they do not make the quesadilla soggy.
  • Use a lower heat than you think. The cheese needs time to melt before the tortilla burns.
  • Oaxaca cheese is stringy and mild. Mozzarella is the best common UK swap.

Storing and freezing

Best eaten hot. Keeps 2 days in the fridge and crisps up again in a dry pan or hot oven until steaming hot all through.

Questions

Can I make these dairy free?

Use a dairy free melting cheese, or skip the cheese and double the mushrooms. The mole itself is dairy free.

Do I need to fold the tortillas?

You can fold a single tortilla in half like a taco, but two layered tortillas hold more filling and cook flat.

Can I add other fillings?

Yes. Roast squash, cooked chicken or black beans all go well with mole and cheese.
