Method
- 1
Mix the masa harina, salt and warm water into a soft dough, kneading for 2 minutes. It should feel like soft play dough. Cover and rest for 15 minutes.
15 min - 2
Warm your ready made refried beans (see the base recipe) in a small pan and keep them warm.
- 3
Fry the mushrooms in 1 tbsp oil in a hot pan for 6 minutes until browned, then stir in your ready made easy red mole (see the base recipe) with 3 tbsp water and warm for 3 minutes.
6 min - 4
Roll the dough into 8 balls. Press each into a disc about 8 cm wide and 1 cm thick, then pinch up the edge to make a low rim.
- 5
Heat a dry griddle or frying pan to medium and cook each sope for 2 minutes a side until set and lightly spotted. Brush with some of the frying oil and fry for 1 minute until crisp.
4 min - 6
Spread each warm sope with beans, spoon on the mushrooms and top with lettuce and pickled onions. Eat straight away.
Tips
- Pinch the rim while the sope is still warm and flexible. Cold, set dough cracks.
- If the dough cracks as you press it, knead in a teaspoon of warm water at a time.
- Keep the toppings warm but the lettuce cold so you get contrast.
Storing and freezing
Cooked sopes keep 2 days in the fridge and crisp up in a hot pan. Top just before serving. The dough bases freeze for 1 month, between sheets of baking paper.
Questions
What is the difference between a sope and a tostada?
A sope is a thick masa base with a pinched rim, cooked on a griddle and often fried. A tostada is a flat, thin tortilla that is fried or baked until completely crisp.
Can I use plain cornflour or polenta?
No. Masa harina is corn treated with lime water, which gives dough that holds together. Cornflour and polenta will crumble.
Can I add meat?
Yes, shredded chicken or chorizo are traditional. Keep the same amount of mole and beans.
