Method

  1. 1

Heat the oil in a frying pan and fry the poblano strips and onion for 8 minutes over a medium heat until soft and lightly charred. Tip out and set aside.

    8 min
  2. 2

Cook your homemade Mexican chorizo (see the base recipe) in the same pan, cold to start, for 8 minutes, breaking it up, until browned and cooked through.

    8 min
  3. 3

Warm each corn tortilla (see the base recipe) in a dry pan for 20 seconds. Put cheese, chorizo and rajas on one half and fold over.

  4. 4

Cook each quesadilla in a dry hot pan for 2 minutes per side, pressing gently, until crisp and the cheese melts.

    4 min
  5. 5

Cut into wedges and serve straight away with your pico de gallo (see the base recipe).

Tips

  • Use less filling than you think. Overstuffed quesadillas split and leak.
  • Press a lid or plate lightly on top for the last minute to help the cheese melt.
  • Fresh masa tortillas fold best when warm and flexible.

Storing and freezing

Best eaten fresh. Leftovers keep in the fridge for 2 days once cooled within 2 hours and should be reheated in a hot pan until steaming hot throughout.

Questions

Which cheese works best?

Oaxaca or Chihuahua cheese is traditional. Low moisture mozzarella is the best everyday UK substitute for its stretch.

Can I use flour tortillas?

Yes, but the flavour of a corn quesadilla is more authentic, and gluten free. Flour ones crisp faster, in about 90 seconds a side.

Can I make them dairy free?

Yes. Use a good dairy free melting cheese alternative, though it will melt less stretchily.
