Method
- 1
Bring a large pan of water to the boil. Cook the corn for 5 minutes, then drain and pat dry.
5 min - 2
Brush the corn with the oil. Heat a griddle pan or barbecue until very hot and cook the corn for 8 to 10 minutes, turning, until charred in spots.
10 min - 3
Spread your ready made elote crema (see the base recipe) all over each hot cob with the back of a spoon.
- 4
Sprinkle over the chilli powder and coriander.
- 5
Drizzle with your ready made salsa taquera (see the base recipe) and serve with lime wedges.
Tips
- Pre-boiling makes the corn tender, so it only needs a few minutes on the griddle to char.
- Put the sauce on while the corn is hot so it melts slightly and clings.
- Serve with plenty of napkins. This is meant to be messy.
Storing and freezing
Best eaten straight away. Keep leftover corn in the fridge for 2 days; cut off the kernels and reheat in a pan until steaming hot.
Questions
What is the difference between elote and esquites?
Elote is served on the cob. Esquites are the same flavours served as kernels in a cup, often with broth. Both are popular street foods.
Can I use frozen corn on the cob?
Yes. Boil from frozen for 6 to 8 minutes, then char as in the recipe.
Is it vegetarian?
Yes, if the cheese in the crema is vegetarian. Check the label on the feta.
