Heat 2 tbsp oil in a large frying pan over a high heat. Fry the potatoes for 10 minutes, turning occasionally, until crisp and golden.

  3. 3

Add the onion and carnitas (see the base recipe) and cook for 4 minutes, until the pork is steaming hot all the way through.

  4. 4

In a second pan, heat the remaining oil and fry the eggs until the whites are set, 2 to 3 minutes.

  5. 5

Divide the potato mixture between plates and top each with an egg. Spoon over the salsa verde (see the base recipe) and add avocado and coriander.

Tips

  • Par-boil the potatoes first. It gives a fluffy centre and a crisp crust.
  • Do not stir constantly. Let the potatoes sit for a few minutes to brown.
  • Make sure the eggs are cooked through for children or anyone vulnerable.

Storing and freezing

Best eaten fresh. The potato and pork mixture keeps in the fridge for 2 days and reheats in a hot frying pan until steaming hot all the way through.

Questions

Can I make it without eggs?

Yes. The potatoes and pork are filling alone, and avocado adds richness.

What potatoes work best?

Waxy varieties such as Charlotte or Maris Peer hold their shape. Floury potatoes break up.

Is it spicy?

Only as spicy as your salsa verde, so add or leave out chillies in that base recipe to suit your family.
