Method

  1. 1

Heat the oven to 220°C (200°C fan). Mix 80 g of your ready made guajillo adobo paste (see the base recipe) with the oil, salt and 3 tablespoons of water.

  2. 2

Toss the sweet potato wedges in the marinade until coated and spread them in a single layer on two baking trays.

  3. 3

Roast for 35 to 40 minutes, turning once, until tender inside and sticky and dark at the edges.

  4. 4

Scatter the pumpkin seeds over the tray for the last 5 minutes so they toast.

  5. 5

Squeeze over the lime juice and sprinkle with coriander.

  6. 6

Serve hot with your ready made creamy avocado salsa (see the base recipe) spooned over or on the side for dipping.

Tips

  • Use two trays rather than one crowded one. Crowded wedges steam and stay soft instead of crisping.
  • Wedges of similar thickness cook at the same pace. Cut them about 2 cm thick.
  • The adobo can catch and darken at the edges. If it is browning too fast, turn the oven down by 20C.
  • Serve as a side for tacos, or as a main with beans and rice.

Storing and freezing

Keep leftover wedges in the fridge for up to 3 days and reheat on a hot tray in the oven until steaming hot all the way through. The salsa keeps 1 to 2 days.

Questions

Can I use ordinary potatoes?

Yes. Cut them into 3 cm chunks and roast for 40 to 45 minutes. Floury types like Maris Piper give a crisp edge.

What is camote?

Camote is the Mexican name for sweet potato. It is also cooked in Mexico as a sweet street snack, but this savoury version is a side dish.

Can I make it ahead?

Yes. Roast the wedges earlier in the day, chill quickly, then reheat on a hot tray for 10 minutes. Make the avocado salsa fresh, as it browns.
