Method
- 1
Heat the oven to 200°C (180°C fan). Spread 100 ml of your ready made salsa ranchera (see the base recipe) over the base of a baking dish.
- 2
Heat the oil in a frying pan over a medium heat. Fry each corn tortilla for 10 seconds per side, just to soften, and drain on kitchen paper.
1 min 20 s - 3
Mix the mozzarella with the onion. Spoon some onto each tortilla, roll tightly and place seam side down in the dish.
- 4
Pour the rest of the salsa ranchera over the top and scatter with the queso fresco.
- 5
Bake for 18 to 20 minutes, until the sauce is bubbling and the cheese has melted.
19 min - 6
Drizzle with your ready made lime crema (see the base recipe), scatter with the coriander and serve at once.
Tips
- A quick dip in hot oil stops the tortillas tearing as you roll them.
- Cover the dish with foil if the top browns before the middle is hot.
- Oaxaca cheese melts beautifully if you can find it, and mozzarella is the best swap.
Storing and freezing
Cool within 2 hours. Keep covered in the fridge up to 2 days and reheat until steaming hot all the way through. They freeze up to 2 months before baking.
Questions
Can I add chicken?
Yes. Mix 300 g shredded cooked chicken with the cheese for a heartier filling.
Why did my tortillas split?
They were cold and dry. Warming them in hot oil or steaming them for 20 seconds makes them pliable.
