Method
- 1
Put the cauliflower, beans, cucumber and onions in a large bowl. Dissolve the salt in the water and pour it over, adding a plate to keep the vegetables under. Leave overnight, 12 to 18 hours.
- 2
Drain well and rinse in a colander under cold water. Shake dry and pat with a clean tea towel, because wet vegetables will water down the sauce.
- 3
In a large pan, whisk the cornflour, mustard, turmeric and ginger with about 6 tbsp of the vinegar into a smooth paste. Stir in the rest of the vinegar, the sugar and the celery seeds.
- 4
Bring to the boil, stirring all the time, until the sauce thickens, which takes about 3 minutes. Simmer gently for 5 minutes.
5 min - 5
Add the drained vegetables and simmer for 3 to 5 minutes, just until the sauce coats them and they are heated through. They should still be crunchy.
4 min - 6
While it cooks, wash 3 jars in hot soapy water, rinse and sterilise in a 120°C (100°C fan) oven for 15 minutes. Boil the lids for 5 minutes.
- 7
Spoon into the hot jars, pushing out air bubbles, and top up with sauce so the vegetables are covered. Seal with vinegar proof lids. Leave for 4 weeks before opening. Keeps unopened for up to 1 year. Once opened keep in the fridge and use within 6 weeks.
