Method
- 1
Heat the oven to 200°C (180°C fan). Heat the oil in an ovenproof frying pan or shallow dish over a medium heat. Soften the pepper and onion for 6 minutes.
6 min - 2
Stir in your ready made chipotle tinga sauce (see the base recipe) and half the lime juice. Bring to a simmer for 3 minutes.
3 min - 3
Season the cod fillets with salt and nestle them into the sauce, spooning some sauce over the top.
- 4
Bake for 12 to 15 minutes, until the fish is opaque and flakes easily and the thickest part is steaming hot.
14 min - 5
Meanwhile, heat your Mexican black beans (see the base recipe) until steaming hot all the way through.
- 6
Serve the cod and sauce over the beans with avocado, coriander and lime wedges.
Tips
- Pick thick fillets from the middle of the fish. Thin tail pieces overcook while the sauce is still heating.
- Do not bury the fish. Spoon sauce over but leave the top slightly exposed so it roasts, not poaches.
- Check that the cod flakes easily at its thickest part before serving.
Storing and freezing
Cool quickly and keep in the fridge for up to 2 days. Reheat gently until steaming hot all the way through. Freezing is not recommended for this dish.
Questions
Can I use frozen cod?
Yes. Defrost fully in the fridge overnight, pat dry and cook as above. Frozen fish releases more water so drain well.
What other fish works?
Haddock, hake, pollock or salmon fillets all suit it. Adjust the time by thickness and check the fish flakes and is opaque all the way through.
Is this dairy and gluten free?
Yes, it is gluten free, dairy free, egg free and nut free if your tinga sauce and bean base follow the base recipes. Check labels on tinned chipotles.
