Method
- 1
Boil the potato cubes in salted water for 8 to 10 minutes until just tender but still holding their shape. Drain and steam dry for 2 minutes.
9 min - 2
Heat the oil in a large frying pan over a medium high heat. Fry the potatoes for 8 minutes, turning now and then, until golden at the edges.
8 min - 3
Add the onion and cook for 3 minutes until softening.
3 min - 4
Pour in your ready made chipotle tinga sauce (see the base recipe) and 50 ml of water. Simmer for 5 minutes, folding gently, until the sauce clings to the potatoes.
5 min - 5
Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side and keep them wrapped in a tea towel.
- 6
Fill each tortilla with the potato tinga. Top with avocado, lettuce, radish, coriander and a squeeze of lime.
Tips
- Waxy potatoes hold their shape. Floury ones break up into mash, which still tastes good but is less like the street food version.
- Parboil first, then fry. This gives crisp edges and a soft middle without the potatoes sticking.
- Stir gently once the sauce goes in. Squashed potato makes the sauce thick and heavy.
Storing and freezing
Keep the filling in the fridge for up to 3 days and reheat until steaming hot all the way through. Warm fresh tortillas to serve.
Questions
Is this vegan?
Yes. The filling, tortillas and toppings are plant based if your tinga sauce was made with vegetable stock as in the base recipe.
Is it gluten free?
Yes, as long as your corn tortillas and tinned chipotles are gluten free. Check the label, as some chipotle brands add wheat.
Can I add protein?
Yes. Stir in a tin of drained black beans or fry some crumbled chorizo style vegan sausage with the potatoes. Both work well with the smoky sauce.
