Method

  1. 1

Peel the cucumbers in alternate strips so they keep some green. Cut them in half lengthways, scoop out the seeds with a teaspoon and cut into sticks.

  2. 2

Peel the jicama and cut into sticks the same size. If using radishes, trim and cut into halves.

  3. 3

Toss both vegetables with the lime juice, salt and half of the chilli powder.

  4. 4

Pile into a bowl or small cups.

  5. 5

Drizzle with your ready made salsa taquera (see the base recipe), and sprinkle over the remaining chilli powder and coriander. Serve cold.

Tips

  • Salt draws water out of cucumber, so dress the snack just before eating.
  • Scooping the seeds from the cucumber keeps the sticks crisp.
  • Jicama is crunchy and slightly sweet like a fresh water chestnut. Find it in larger supermarkets or Latin shops.

Storing and freezing

Best eaten fresh. Keep the undressed sticks in the fridge in a covered tub for up to 2 days.
