Method

  1. 1

Marinate the steak in your ready made carne asada marinade (see the base recipe) in the fridge for 2 to 8 hours. Discard the used marinade.

  2. 2

Pat dry and sear the steak on a very hot pan for 3 minutes each side. Rest for 5 minutes and chop into small pieces.

  3. 3

Warm the corn tortillas (see the base recipe) in a dry pan for 30 seconds each side until pliable.

    1 min
  4. 4

Lay 4 tortillas in the pan, cover each with a quarter of the cheese and the steak, then top with a second tortilla.

  5. 5

Cook over a medium heat for 2 minutes each side, pressing down, until the cheese melts and the tortillas are crisp at the edges.

  6. 6

Open each mulita, add onion and coriander, drizzle with salsa taquera (see the base recipe) and serve with lime.

Tips

  • Use proper melting cheese. Oaxaca pulls like mozzarella and gives the right stringy centre.
  • Press the tops down with a spatula so the tortillas crisp and seal.
  • Make smaller tortillas, 12 cm, so each mulita is a manageable size.

Storing and freezing

Best eaten hot. Cooked steak keeps in the fridge for up to 3 days if cooled within 1 to 2 hours, and should be reheated until steaming hot all the way through.

Questions

What is the difference between a mulita and a quesadilla?

A mulita uses two corn tortillas as a sandwich around cheese and meat, while most quesadillas are one folded tortilla. Mulitas are common in Sinaloa and Sonora.

Can I make them gluten free?

Yes, if your corn tortillas are pure masa and the other ingredients are gluten free. Check labels, as some shop bought tortillas are mixed with wheat.
