Method

  1. 1

Line a large baking tray with baking paper or a silicone mat and brush it lightly with the oil. Measure the spread, bicarbonate of soda, vanilla and salt into separate little piles near the hob, as the last steps move fast.

  2. 2

Put the sugar, golden syrup and water in a heavy-based pan. Heat gently, stirring, until the sugar dissolves. Then stop stirring.

  3. 3

Boil for about 6 minutes until the syrup is pale gold, or 135C on a thermometer.

  4. 4

Stir in the peanuts and keep cooking, stirring, for 4 minutes until the syrup is a deep amber and smells nutty, or 150C.

  5. 5

Take the pan off the heat. Stir in the spread, vanilla and salt, then the bicarbonate of soda. It will foam up and lighten.

  6. 6

Pour straight onto the tray and spread thin with an oiled spatula. Leave to cool and harden for 30 minutes, then snap into pieces. Keep in an airtight tin.
