Method

  1. 1

Warm your ready made arroz rojo (see the base recipe) in a covered pan with 3 tbsp water until steaming hot all the way through. Reheat chilled rice only once.

    6 min
  2. 2

Warm your ready made salsa roja and salsa verde (see the base recipes) in two small pans over a low heat until just bubbling.

    3 min
  3. 3

Heat 2 tbsp of the oil in a frying pan over a medium-high heat. Fry the tortillas, a few at a time, for 30 seconds each side until crisp at the edges but still bendy. Lift onto a plate.

    2 min
  4. 4

Heat the remaining oil in the same pan and fry the eggs for 2 to 3 minutes until the whites are set and edges are crisp.

    3 min
  5. 5

Lay two tortillas on each plate and put an egg on each. Spoon red salsa over one egg and green salsa over the other.

  6. 6

Spoon rice down the middle between them. Top with avocado, queso fresco, onion and coriander.

Tips

  • Use a bought gluten free corn tortilla, and fry it briefly for a crisp base that holds the eggs.
  • Warm both salsas properly. Cold salsa on hot eggs is a letdown.
  • Keep the salsas to each egg. The two-colour split is the point of the dish.

Storing and freezing

Best eaten straight away. Keep leftover rice and salsas separately in the fridge for 1 day, and reheat the rice only once.

Questions

Why are they called divorced eggs?

The red and green salsas are kept apart on separate eggs, as if the pair were separated. Usually a line of refried beans keeps them apart on the plate.

Can I use refried beans between the eggs?

Yes, a spoon of refried beans is the classic divider. Here the red rice does the same job.

Is it dairy free?

It is if you leave out the queso fresco. Everything else on the plate is dairy free.
