Method

  1. 1

Mix the quark, egg, flour, semolina and salt into a soft dough. Knead briefly. It should be tacky but not sticky, so add a spoonful of flour if needed. Rest for 10 minutes.

  2. 2

Cut each plum open along one side and take out the stone. Push a sugar cube into the gap and press the plum closed.

  3. 3

Divide the dough into 12 pieces. Flatten each in your palm, wrap around a plum and roll into a smooth ball, sealing well.

  4. 4

Slide the dumplings into a large pan of gently simmering water. Cook for 10 minutes, turning once, until they float and feel firm. Do not let the water boil hard.

Meanwhile, melt the butter in a frying pan and toast the breadcrumbs for 3 minutes until golden and nutty.

Lift the dumplings out with a slotted spoon. Roll them in the buttery breadcrumbs, then scatter over the icing sugar and the quark. Serve warm.
