Method

  1. 1

Peel the potatoes and grate them on the fine side of a box grater. Do not rinse them. Tip off any watery liquid that pools but keep the starch that settles in the bottom.

  2. 2

Stir in the garlic, flour, egg, marjoram, caraway, salt and pepper until it makes a loose, sticky batter.

  3. 3

Heat 1.5 tbsp of the oil in a large non stick frying pan over a medium heat. Spoon in a quarter of the mixture and spread it into a pancake about 18 cm across and 5 mm thick.

  4. 4

Fry for 4 to 5 minutes until the underside is deep golden and crisp, then flip and fry for another 4 minutes. It should smell toasty and the edges should be lacy.

  5. 5

Drain on kitchen paper and keep warm in a low oven while you fry the other three, adding oil each time.

  6. 6

Serve hot, cut into wedges, with a crisp green salad or pickled gherkins.
