Method

  1. 1

Heat the oven to 220°C (200°C fan). Rub the pork all over with the crushed garlic, caraway and 2 tsp salt, pushing it into the scoring. Put it skin side up in a roasting tin with the water.

  2. 2

Roast for 30 minutes to start the crackling, then turn the oven down to 160°C (140°C fan) and roast for 2 hours, adding a splash of water if the tin dries out. The meat should pull apart easily.

  3. 3

For the dumplings, peel the cold boiled potatoes and grate or rice them into a bowl. Mix in the flour, semolina, egg and salt and knead briefly to a soft dough. Do not overwork it.

  4. 4

Shape into two rolls about 18 cm long. Lower into a large pan of simmering salted water and cook for 20 minutes, turning once. Lift out, prick with a fork and slice.

  5. 5

For the sauerkraut, soften the onion in the oil for 5 minutes. Add the sauerkraut, sugar, caraway, bay and 100 ml water, cover and simmer for 30 minutes. Stir in the grated raw potato for the last 10 minutes to thicken it.

Rest the pork for 15 minutes, then carve. Serve with dumplings, sauerkraut and the pan juices spooned over.
