Quick dinners 🌮 Tex-Mex

One Pot Chilli Beef and Rice

Lean beef mince, kidney beans and long grain rice simmered together in a smoky chilli sauce. The rice cooks right in the pan, so there is no second pot.

  1. 1

Heat the oil in a large pan with a lid over a high heat. Brown the mince for 6 minutes, breaking it up, until no pink remains.

  2. 2

Add the onion and pepper and cook for 5 minutes. Stir in the garlic, chilli powder, cumin, paprika and tomato purée and cook for 1 minute.

  3. 3

Add the tomatoes, kidney beans, rice, water and salt. Stir well and bring to a simmer.

  4. 4

Cover and cook on a low heat for 20 minutes, stirring once or twice from the bottom so nothing sticks.

  5. 5

Take off the heat and leave covered for 5 minutes. The rice should be tender and the sauce thick. If it still looks wet, simmer uncovered for a couple of minutes.

  6. 6

Stir through the coriander and serve with lime wedges, avocado or a spoonful of soured cream if you like.
