Method
- 1
Heat the oven to 200°C (180°C fan). Heat the oil in a large frying pan over a high heat and brown the beef for 6 minutes, breaking it up, until the juices have cooked off.
6 min - 2
Stir in the taco seasoning mix and 100 ml water. Simmer for 4 minutes until thick, then add the black beans and warm through for 2 minutes.
6 min - 3
Warm your ready made queso (see the base recipe) in a small pan over a low heat for 5 minutes, stirring, until smooth and steaming hot all the way through.
5 min - 4
Spread the totopos over a large baking tray. Spoon the beef and bean mix over the top and bake for 6 minutes until hot.
6 min - 5
Pour the warm queso over the nachos. Scatter over the tomato, spring onions, jalapeño slices and coriander, and eat straight away.
Tips
- Build the nachos in two layers, with half the chips, beef and queso, then the rest, so every chip is covered.
- Warm the queso gently and stir often. It can split if boiled hard.
- Dice the tomato small and drain off excess juice so the chips stay crunchy.
- Serve extra queso and lime crema in bowls for dipping.
Storing and freezing
Nachos are best eaten straight away. Keep leftover beef mix in the fridge for up to 3 days and reheat until steaming hot all the way through. Store the queso in a covered pot for up to 3 days.
Questions
Are these nachos gluten free?
Yes, if the corn totopos and queso base are gluten free. The queso is thickened with cornflour. Check your jalapeño jar and taco seasoning labels.
How do I stop soggy nachos?
Use sturdy chips, bake the beef layer on the chips first, and add the queso and fresh toppings only at the end. Eat within a few minutes.
Can I use pulled chicken instead of beef?
Yes. Use 400 g of cooked shredded chicken warmed with the taco seasoning and a splash of water in the same way.
