  4. 4

Season with salt and a squeeze of lime to taste. Add a splash of water if it is too thick.

  5. 5

Ladle into bowls and top with tortilla strips, pumpkin seeds and coriander.

Tips

  • Never boil hard. Pumpkin seed soups can split and go grainy.
  • Stir while heating, as the soup catches on the bottom of the pan.
  • Blend a ladle of the soup with the beans for a creamier texture.

Storing and freezing

Keeps 3 days in the fridge. Reheat gently, stirring, until steaming hot all through. Freeze the soup without garnishes for up to 2 months.

Questions

Can I serve it cold?

It is best warm, as the sauce thickens when chilled. If you chill it, loosen with stock and reheat.

Can I use another bean?

Yes, butter beans or chickpeas both work.

Can I add chicken?

Yes, stir in 300 g shredded cooked chicken with the beans and warm through.
