450 mldouble cream
400 gsweetened condensed milk
1½ tsppeppermint extract
100 gnut free dark chocolatefinely chopped

Method

Whip the cream in a large bowl to stiff peaks.

Fold in the condensed milk and peppermint extract until smooth.

Add a tiny amount of green colouring if you like and stir through.

Fold in the chopped chocolate.

Pour into a loaf tin lined with baking paper, cover and freeze for at least 6 hours.
