Method

  1. 1

Heat the oil in a pan and fry the onion for 5 minutes. Add your ready made Massaman curry paste (see the base recipe) and fry for 2 minutes.

    7 min
  2. 2

Add the chicken and stir for 4 minutes. Add the potatoes, coconut milk, water, tamarind, fish sauce and palm sugar. Simmer for 20 minutes until the potatoes are just tender.

    20 min
  3. 3

Mix the cornflour with 2 tablespoons of cold water, stir into the filling and simmer for 2 minutes until thick. Stir in the peas and cool completely.

    2 min
  4. 4

Heat the oven to 200°C (180°C fan). Spoon the cooled filling into a 1.5 litre pie dish.

  5. 5

Roll out your ready made shortcrust pastry (see the base recipe) on a floured surface to a lid 5 cm bigger than the dish. Cover the filling, press the edges, trim and cut a small steam hole.

  6. 6

Brush with milk and bake for 35 minutes until deep golden and the filling is steaming hot all the way through.

    35 min
  7. 7

Rest for 10 minutes before serving.

Tips

  • Cool the filling fully before adding the pastry, or the lid goes soggy.
  • Keep the filling thick. A runny filling will leak and make the pastry heavy.
  • Serve with rice or a crisp cucumber salad.

Storing and freezing

Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Freeze for up to 2 months. Reheat in the oven until steaming hot all the way through.

Questions

Can I make it ahead?

Yes, make the filling a day early and chill it, then top with pastry and bake on the day.

Can I use ready made pastry?

Yes, any shortcrust or puff pastry works. Check the label for dairy or gluten as needed.

Can I make it gluten free?

Use gluten free shortcrust pastry for the lid, and the rest of the ingredients are already gluten free.
