Questions
Can I swap the squash for sweet potato?
Yes, use the same weight. Sweet potato gives a slightly sweeter, creamier result.
Is it spicy?
No, it is mild with a sweet warm spice flavour. Add fresh chilli at the table for heat.
Is it really vegan?
Yes, if the paste is made without shrimp paste and the palm sugar and tamarind are vegan. Check labels.
