Method
- 1
Heat the oil in a large pan and fry your ready made Thai green curry paste (see the base recipe) for 1 minute until fragrant.
- 2
Add the coconut milk, soy sauce, sweet potato and aubergine. Simmer for 12 minutes until the vegetables are nearly tender.
12 min - 3
Mix the cornflour with 2 tablespoons of cold water, stir into the curry and add the green beans. Simmer for 3 minutes until thick. Add the lime zest and juice, then cool for 20 minutes in a 1.5 litre pie dish.
20 min - 4
Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) to 5 cm wider than the dish.
- 5
Lay it over the curry, trim and crimp the edge, cut a steam hole and brush with egg.
- 6
Bake for 30 to 35 minutes until golden and bubbling. Rest for 5 minutes.

Tips
- Cook the vegetables until just tender, as they cook on in the oven.
- Make sure the filling is thick, because loose sauce softens the underside of the pastry.
- Add a handful of fresh Thai basil or coriander after baking.
Storing and freezing
Cool within 2 hours and keep in the fridge for up to 3 days. Reheat portions at 180C (fan 160C) for 20 minutes until steaming hot all the way through. The filling freezes for 2 months.
Questions
Is it vegetarian?
Yes, if your green curry paste has no shrimp paste. Many do, so check the label and choose a vegetarian paste, or use the homemade base.
Can I use other vegetables?
Yes. Butternut squash, courgette, mangetout and baby corn work. Keep the total about 650 g.
Is it gluten free?
Not with standard pastry and soy sauce. Use gluten free shortcrust and tamari for a gluten free version.
