Method
- 1
Make your agua fresca syrup (see the base recipe) in advance and chill it.
- 2
Blend the 300 g watermelon until smooth and mix it with 300 ml of the ready made agua fresca syrup (see the base recipe), the lime juice and the chilli powder.
- 3
Divide the small watermelon cubes between six lolly moulds, then pour over the watermelon mixture, leaving a little room for expansion.
- 4
Freeze for 1 hour, then push in the lolly sticks.
60 min - 5
Freeze for at least another 4 hours or overnight until solid. Run the moulds under warm water for 10 seconds to loosen and serve.
Tips
- Dip the moulds briefly in warm water to release the lollies cleanly.
- Add the chilli powder sparingly. A pinch is enough to tingle without burning.
- Pack in chunks of watermelon for texture, but cut them small so the lollies are easy to bite.
- Freeze overnight for the best texture.
Storing and freezing
Keep wrapped in the freezer for up to 3 months. Eat within a month for the best flavour.
Questions
Do I need special moulds?
No. Use small paper cups or yoghurt pots, and insert lolly sticks once the mixture is half frozen after about 1 hour.
Can I use other fruit?
Yes. Use mango, pineapple or strawberry syrup with matching fresh fruit pieces.
Are these suitable for children?
The chilli is optional. Leave it out for young children and just use lime and salt.
