Method

  1. 1

Soak 8 wooden skewers in water for 20 minutes so they do not burn, or use metal ones.

    20 min
  2. 2

Toss the prawns with your ready made al pastor marinade (see the base recipe). Chill for 20 to 30 minutes only. Longer than that and the acid starts to make the prawns tough.

  3. 3

Thread the prawns on to the skewers, alternating with pineapple, onion and red pepper.

  4. 4

Heat a griddle pan or barbecue until very hot and brush it with the olive oil. Grill the skewers for 2 to 3 minutes per side, turning once, until the prawns are pink all the way through and lightly charred.

    6 min
  5. 5

Warm the cilantro lime rice in a covered pan or the microwave until steaming hot all the way through.

Serve the skewers on the rice, scattered with coriander and with lime wedges to squeeze over.

Tips

  • Marinate the prawns for 30 minutes at most. The vinegar and pineapple soften them quickly and long soaks make them rubbery.
  • Cut the pineapple and vegetables a similar size to the prawns so everything cooks together.
  • Do not overcook. Prawns are done when they turn pink and curl into a loose C shape.
  • Pat the prawns dry before marinating so the marinade clings.

Storing and freezing

Keeps in the fridge for up to 2 days, cooled within 1 to 2 hours. Reheat rice only once and until steaming hot all the way through. Do not freeze cooked prawns twice.

Questions

Can I use frozen prawns?

Yes. Thaw them fully overnight in the fridge, drain and pat dry before marinating. Do not marinate while still frozen.

How do I know the prawns are cooked?

They turn pink and opaque and curl into a loose C. A tight O shape means overcooked. Discard any that stay grey.

Is it gluten free and dairy free?

Yes. Prawns, pineapple, vegetables, rice and the marinade contain no gluten, dairy, egg or nuts. Prawns are shellfish, so avoid if allergic.
