  1. 1

Heat the oil in a large, deep frying pan over a medium heat. Soften the onion for 4 minutes.

  2. 2

Pour in your ready made salsa a la diabla (see the base recipe) and 100 ml water. Simmer for 4 minutes until it bubbles and thickens slightly.

  3. 3

Make 8 small hollows in the sauce with the back of a spoon and crack an egg into each.

  4. 4

Cover and cook on a low heat for 4 to 6 minutes, until the whites are set and the yolks are as runny as you like. Keep the eggs well cooked if serving to anyone vulnerable.

  5. 5

Meanwhile, warm your corn tortillas (see the base recipe) in a dry pan for 20 seconds a side.

  6. 6

Scatter over the queso fresco and coriander and serve with the warm tortillas and lime wedges.

Tips

  • Use a wide pan so the eggs have room and cook evenly.
  • The sauce should be loose enough to dip into but not watery, so simmer it before the eggs go in.
  • Crumbled feta works if you cannot find queso fresco.
  • Spoon a little sauce over the whites to help them set.

Storing and freezing

Best eaten fresh. Cooked eggs in sauce do not reheat well. Keep leftover sauce in the fridge for up to 3 days.

Questions

Can I make it less spicy?

Yes. Add 150 ml of passata or a tin of chopped tomatoes to the sauce, or serve with soured cream.

Can I make it vegan?

Use soft scrambled tofu instead of the eggs and leave off the cheese. The sauce itself is vegan.

What can I serve it with?

Warm tortillas, refried beans, avocado or fried plantain are all common companions.
