Method
- 1
Check the fish is very fresh and labelled suitable for eating raw, and keep it cold until needed. Cut it into 1 cm dice.
- 2
Put the fish in a non metallic bowl with your ready made ceviche lime marinade (see the base recipe). Stir, cover and chill for 15 to 20 minutes, until the fish turns opaque.
20 min - 3
Drain off most of the liquid. Fold in the cucumber, red onion and coriander and season with salt.
- 4
Lay out your ready made tostadas (see the base recipe) and spread each with avocado.
- 5
Spoon the ceviche on top and finish with your ready made salsa macha (see the base recipe). Serve straight away, before the tostadas soften.
Tips
- Buy fish from a good fishmonger and tell them it is for raw use. Keep it on ice or in the coldest part of the fridge.
- Assemble each tostada just before eating or it goes soggy.
- Citrus does not make fish safe in the way cooking does, so do not use it for pregnant guests or anyone vulnerable.
Storing and freezing
Best eaten within an hour of making. Do not keep leftover raw fish ceviche more than 1 day in the fridge.
Questions
Is ceviche cooked?
No. The lime acid firms and whitens the fish, but it does not make it safe the way heat does. Use very fresh fish.
Can I use prawns instead?
Use cooked prawns, chopped, with the marinade for 10 minutes. Do not use raw prawns.
