Heat the oven to 220°C (200°C fan). Pat the wings very dry with kitchen paper. Toss with the baking powder and half the salt.

  2. 2

Arrange on a wire rack over a lined tray. Bake for 25 minutes, turn and bake for 20 to 25 minutes more until deep golden and crisp, with clear juices.

    45 min
  3. 3

Meanwhile warm your ready made chipotle adobo sauce (see the base recipe) in a small pan with the honey, oil, garlic, lime juice and remaining salt for 3 minutes until glossy.

    3 min
  4. 4

Tip the hot wings into a large bowl, pour over the glaze and toss until sticky.

  5. 5

Return to the tray for 3 minutes so the glaze sets.

    3 min
  6. 6

Serve with your ready made lime crema (see the base recipe) for dipping, the carrot and celery sticks and lime wedges.

Tips

  • Dry the wings thoroughly and use baking powder, not baking soda. It draws out moisture so the skin turns crisp like fried wings.
  • Toss the wings in the glaze while they are hot, and do it in a large bowl so each one is coated.
  • Check wings are done by piercing the thickest part. The juices should run clear with no pink.

Storing and freezing

Cool within 2 hours. Keep in the fridge for up to 3 days and reheat at {t200} for 15 minutes until steaming hot all the way through. Keep the crema chilled for 3 days.
