Method

  1. 1

Warm your ready made refried beans (see the base recipe) in a small pan over a low heat with a splash of water until loose and steaming hot.

  2. 2

Heat the oil in a frying pan over a high heat. Cook the dry sweetcorn for 6 to 8 minutes until charred, then take off the heat.

  3. 3

Warm the tostadas in a low oven for 3 minutes so they are crisp.

  4. 4

Toss the cabbage and radishes with the lime juice and a pinch of salt.

  5. 5

Spread each tostada with warm beans, then top with cabbage, avocado and charred corn. Drizzle over your ready made elote sauce (see the base recipe) and eat straight away.

Tips

  • Assemble just before eating. A tostada left standing goes soft within about 5 minutes.
  • Spread the beans right to the edge, they act as the glue for the toppings.
  • Squeeze lime over the avocado so it keeps its colour.
  • Serve two per person for a light meal, three for a hearty one.

Storing and freezing

Store components separately. Cooked beans keep in the fridge for up to 3 days, the sauce for up to 3 days. Do not store assembled tostadas.

Yes, if you use the dairy free and egg free elote sauce swaps from the base recipe and skip any cheese.

Can I use black beans?

Yes. Mexican black beans or pot beans mashed and warmed work well.
