Method

  1. 1

Heat the oven to 200°C (180°C fan). Mix the olive oil with the ready made harissa paste (see the base recipe) and a pinch of salt in a large bowl. Add the carrots and turn until every piece is coated.

  2. 2

Spread the carrots in a single layer on a large tray. Roast for 30 to 35 minutes, turning once, until tender and charred at the edges.

  3. 3

Scatter the sunflower and sesame seeds over for the last 4 minutes to toast them.

    4 min
  4. 4

Stir the lemon juice and a splash of cold water into your ready made tahini sauce (see the base recipe) until it pours like double cream.

  5. 5

Spread the tahini sauce over a platter. Pile the hot carrots on top.

  6. 6

Finish with the toasted seeds and torn mint leaves and serve warm.

Tips

  • Cut thick carrots in half lengthways so every piece is roughly the same thickness and cooks evenly.
  • Add a little maple syrup to the harissa for extra caramelisation if you like a sweeter finish.
  • Add a tin of drained chickpeas to the tray for a more filling light meal.

Storing and freezing

Keep in a covered container in the fridge for up to 3 days. Serve cold in a salad or reheat at 200 C for 10 minutes until steaming hot. Keep the tahini sauce separate.

Questions

Is harissa very hot?

It depends on the paste. Rose harissa is gentle, while some tubes are fiery. Start with half the amount, taste, and add more if you like heat.

What can I serve this with?

It goes well with grilled lamb, roast chicken or falafel, or on a mezze table with hummus and flatbread.
