Method

  1. 1

Mix the chicken with the ready made harissa paste (see the base recipe), 1 tablespoon of the olive oil and half the lemon juice. Leave for 10 minutes, or up to 6 hours in the fridge.

  2. 2

Heat the remaining oil in a large frying pan over a medium-high heat. Cook the chicken for 6 to 8 minutes, turning, until browned and cooked through with no pink inside and clear juices.

  3. 3

Squeeze over the rest of the lemon juice and remove from the heat.

  4. 4

Warm the flatbreads in a dry pan or the oven for 1 minute each.

  5. 5

Spread each flatbread with a generous layer of your ready made hummus (see the base recipe).

  6. 6

Top with lettuce, cucumber, tomato, red onion and chicken, then roll up tightly. Cut in half to serve.

Tips

  • Cut the chicken into thin even strips so it cooks quickly without drying out.
  • Check how hot your harissa is before using the full amount. Rose harissa is mild, spicy tubes are not.
  • Wrap in baking parchment to keep the wrap tidy for lunchboxes.

Storing and freezing

Keep cooked chicken in the fridge for up to 2 days and eat cold in salads or reheat until steaming hot. Assemble wraps fresh, as they go soggy if left filled.

Questions

How do I make the wraps less spicy?

Use half the harissa and add a squeeze of lemon. A little extra hummus in each wrap also cools the heat.

Can I use tofu instead of chicken?

Yes. Press 400 g firm tofu, cut into strips and pan-fry in the harissa oil for 8 to 10 minutes until browned. The wraps are then vegan if the flatbreads are.
