Method

  1. 1

Heat the oven to its highest setting, around 240°C (220°C fan), and put two large baking trays in to heat up.

  2. 2

Heat the olive oil in a frying pan over a medium high heat and cook the lamb mince for 6 to 8 minutes, breaking it up, until browned with no pink left. Stir in half of your ready made harissa paste (see the base recipe). Set aside.

    7 min
  3. 3

Divide your ready made pizza dough (see the base recipe) into 4 balls. On a floured surface, roll or stretch each into a thin oval, about 3 mm thick.

  4. 4

Stir the remaining harissa into the passata. Spread over the bases, leaving a small border.

  5. 5

Scatter over the lamb, red onion and crumbled feta. Slide onto the hot trays.

  6. 6

Bake for 8 to 10 minutes until the edges are puffed and charred and the base is crisp.

    9 min
  7. 7

Top with the mint leaves and serve straight away.

Tips

  • Keep the bases thin. Thick dough does not cook through under a wet topping.
  • A very hot tray gives a crisp base. Preheat it for at least 10 minutes.
  • Cook the lamb first, as raw mince will not cook properly in the short time the pizza needs.

Storing and freezing

Eat on the day. Keep leftover slices in the fridge for up to 2 days and reheat in a hot oven until steaming hot all the way through.

Questions

Can I use a shop bought base?

Yes. Use 4 small ready made flatbreads or pizza bases and bake for 6 to 8 minutes. The homemade dough has more flavour and a crisper edge.

Can I make it dairy free?

Leave out the feta and top with sliced olives and a swirl of unsweetened soya yoghurt after baking, which gives the same cooling contrast.

Can I use chicken or beef mince?

Yes. Any mince works, as long as it is browned until cooked through before topping the pizzas.
