Method

  1. 1

Heat the oven to 250°C (230°C fan) with a heavy baking tray inside for 30 minutes.

  2. 2

Divide your ready made pizza dough (see the base recipe) in half. Stretch each piece into an oval about 1 cm thick and place on baking paper.

  3. 3

Press your fingertips into the dough all over to dimple it. Drizzle with 2 tbsp olive oil and scatter over the salt and rosemary.

  4. 4

Slide onto the hot tray and bake for 10 to 12 minutes until puffed, golden and blistered.

  5. 5

Cool for 5 minutes, then split each flatbread horizontally.

  6. 6

Toss the rocket with the lemon juice and remaining oil. Fill the bread with mortadella, torn burrata and rocket and cut into squares.

Tips

  • Do not skip the dimpling. The dents trap oil and salt and stop the surface rising unevenly.
  • Wait until the bread is just warm before filling. Hot bread melts the burrata into a puddle.
  • Mortadella is often made with pistachios, so check the label if you need a nut free version.

Storing and freezing

Eat on the day. Plain baked flatbread keeps for 2 days in an airtight bag, then re-warm in a 180C oven for 5 minutes. Fill only just before eating and keep filled bread in the fridge for no more than 1 day.

Questions

What is pizza bianca?

Pizza bianca is a Roman flatbread baked with only olive oil, salt and often rosemary, with no tomato or cheese. In Rome it is sliced and filled with cured meats like a sandwich.

Can I use other fillings?

Yes. Prosciutto and figs, roasted peppers with mozzarella, or tomato, basil and olive oil all work. Keep fillings fairly dry.

Can I make the bread plain and vegan?

Yes. Leave out the mortadella and burrata and serve the warm bread with olives, roasted vegetables and hummus. The bread is vegan, dairy free and egg free.
