Method
- 1
Roll your ready made fresh pasta dough (see the base recipe) thinly and cut into tagliatelle ribbons. Dust with flour and set aside.
- 2
Bring a large pan of salted water to the boil.
- 3
Heat the oil in a wide pan over a medium heat. Fry your ready made Thai green curry paste (see the base recipe) for 1 to 2 minutes.
1 min 30 s - 4
Add the coconut milk and fish sauce and simmer for 3 minutes. Add the prawns and cook for 3 minutes until pink.
6 min - 5
Cook the pasta in the boiling water for 2 to 3 minutes, until tender. Drain, keeping a mug of cooking water.
3 min - 6
Toss the pasta into the sauce with the spinach, lime juice and zest, adding a splash of pasta water to loosen. Serve topped with coriander and chilli.
Tips
- Fresh pasta cooks fast, so have the sauce ready before the water boils.
- Add the prawns late so they stay tender.
- A splash of pasta water makes the sauce glossy.
Storing and freezing
Best eaten fresh. Cool leftovers within 1 hour, keep in the fridge for up to 1 day and reheat once until steaming hot all the way through.
Questions
Can I use dried pasta?
Yes, 300 g dried tagliatelle cooked to the packet instructions works. It will not use the fresh pasta base.
Is it gluten free?
No, fresh pasta contains wheat. Use gluten free pasta for a gluten free version.
Can I use chicken instead of prawns?
Yes. Add thin slices of chicken breast and simmer for 6 to 7 minutes until cooked through.
