Method
- 1
Heat the oven to 200°C (180°C fan). Cut 4 large squares of foil or baking paper and put the rice on to cook to the packet instructions.
- 2
Mix your ready made Thai green curry paste (see the base recipe) with the coconut milk, fish sauce and lime juice.
- 3
Put a piece of pak choi in the centre of each square. Top with a cod fillet and spoon over the sauce.
- 4
Scatter with spring onions and chilli. Fold the foil up and crimp the edges to make sealed parcels.
- 5
Put the parcels on a baking tray and bake for 15 minutes, until the cod is opaque and flakes easily.
15 min - 6
Open carefully, as the steam is very hot. Serve with the rice and lime wedges.
Tips
- Make sure the parcels are tightly sealed so the steam stays inside.
- Any firm white fish works: haddock, pollock or hake.
- Check the thickest part of the fish: it should flake easily and be opaque.
Storing and freezing
Best eaten straight away. Keep leftovers in the fridge for up to 1 day and eat cold flaked into a salad, or reheat until steaming hot.
