Method

  1. 1

Rub the flour, xanthan gum and butter together until like fine crumbs. Mix in 1 egg and 4 to 5 tbsp cold water to make a firm dough. Wrap and chill for 30 minutes.

  2. 2

Mix the beef, potato, swede and onion in a bowl with the salt and pepper.

  3. 3

Heat the oven to 200°C (180°C fan) and line a baking tray. Divide the dough into 4. Roll each piece between baking paper to a 20 cm round and trim it neat using a plate.

  4. 4

Pile a quarter of the filling in the middle of each round. Brush the edge with beaten egg, lift the paper to fold the pastry over, and crimp the edge firmly shut. Brush the tops with egg.

  5. 5

Bake for 20 minutes, then turn the oven down to 160°C (140°C fan) and bake for 40 minutes more, until the pastry is deep golden and the beef is tender.

    60 min
  6. 6

Rest on the tray for 15 minutes. The filling is very hot. Eat warm or cold.
